I finished bottling my apple tincture today. (I know that I am not necessarily using the word tincture in the correct way here. But it tastes more like a wine than a cordial so tincture it is.) It was a big hit over new years eve and I traded a gallon of it today for a gallon of a friends "Apple Pie".
I also started a new infusion today using snow pears. I am using 8 jars of my grandmothers canned snow pears, 2 bottles of vodka, 4 lbs sugar, and some water. I will let it sit for a few months and see how it turns out. I am hoping it turns out really thick like a cordial. I still have 7 jars of pears left. So depending on how this batch turns out I have the opportunity to make a second batch.

I checked my pear infusion today and it is amazing! It has only been a month and it already is smooth. I am choosing, however reluctantly, to leave it go for another month before even humoring the notion of bottling.
The pear was great. towards the end it was starting to ferment on its own and have a bit of a fuzziness. Not bad, but not how I like it. Although a note: the Pear Cordule and the Strawberry Courdule mixed together is even better than each is separately.
